If you’ve been on campus for more than a week, you’ve probably exhausted all the food options available in the LSU. Even if you aren’t tired of the lack of variety, your wallet might be exhausted from the constant spending. I’ll share with you my way to deal with both of those problems: bring your own pre-prepared meals to campus!
Here are my top two favorite cheap and easy prep meals to bring to school.
Tuna Ceviche
Ingredients:
2 packs of Chunk Light Tuna in Water $1.98
1/2 onion $0.85
2 tomatoes $0.85
small handful of cilantro $0.50
3-4 limes $0.97
salt $0.50
2 tortillas $0.70
First, finely chop the vegetables and cilantro and mix it all together. Then, take the water out of the tuna pack and add the tuna to the veggies mix. Lastly, squeeze the limes into the mix, and add the salt (to taste). This recipe is made for two servings. It can last up to two days in the fridge.
Fruit Bowl
Ingredients:
6 grapes $0.40
2 strawberries $0.80
2 slices of pineapple $1.00
1 small apple $0.80
6 blueberries $1.30
First, make sure to rinse off the fruit. Then, chop the strawberries, pineapple, and apple in little squares and mix it all together with the blueberries and the grapes in a bowl. This recipe is made for two servings and can last up to two days in the fridge.
